Gingersnap Biscotti

We use 1.6kg of ginger root, the add crystalized ginger and soak.  Then we add to the dough.  To finish off, we dip in white chocolate and sprinkle with cinnamon.  Pairs beautifully with Gewurztraminer Wine.  It's like a party in our mouth!
